How Many Sweet Potato Sides Can One Have on #Thanksgiving?

Answer: All of them.

Warning - marshmallows required! From my grandmother's kitchen to yours - enjoy:
Take a mess of sweet potatoes (about 3-4 large ones), wash them and boil (skin peelings intact) until tender. Cool for about 30 minutes or so then peel and mash with the bottom of a large spoon until creamy.
Add butter (1 stick), evaporated milk (1 cup), and sugars (1/2 cup light brown, 1/2 cup granulated sugar). Blend well then add cinnamon (1 TBSP), nutmeg (1 TBSP), chopped pecans (1/2 cup), salt (1/2 TSP), and vanilla extract (1 TBSP).
Pour into greased baking dish, cover tightly with foil, and bake for 40-50 minutes in a oven preheated to 375 degrees. Increase oven temperature to 500 degrees, then uncover and top potatoes with miniature marshmallows (the multi-colored ones if you can find them), and bake until marshmallows begin to melt (about 3 minutes).
